Plain & Raw

I must admit I feel a bit like a cheater on my Foundations of Food's assignment of eating one leafy green per day.  Since Day 1, I have either juiced, blended, or salted the heck out of whatever leafy green I chose for that day. So, although my food coaches, Lisa & Lacy, assured me that all of the above methods still provide the needed nutrients for the body, I decided that for today's dose of Glorious Greens (arugula) I would be brave by eating it plain & raw.  Ok, that's not actually 100% true.  I also added some parmesan shavings, sliced almonds, and a touch of olive oil. Baby steps, people, baby steps...
